With it’s bright colors and delicious taste- this toast has me all kinds of happy.
A few years ago, a friend of mine introduced me to roasted cauliflower with curry- and it is extremely addicting; this is just a modified version of that.
To save time I buy cauliflower crumbles, and you can roast or steam in bag ( Do not steam at work unless you want your floor to spell like baby poop). Next you mash with curry powder, spread on toast, and top with mango and Himalayan salt.
Your bellies will thank you!!
